今天就给大家介绍这种适合家庭制作，简单好吃，又特别有节日气氛的“圣诞节雪花姜饼”。和普通的饼干相比，它的甜度并不高，却因为添加了暖身的红糖、肉桂粉、姜黄粉等，更具风味，也更适合寒冷的冬天。接下来一起看看具体做法吧。

没有模具也不影响，只要有大小合适的圆形慕斯圈，或者小碗，用来扣出圆形饼干底，再在上面画出简单的六边形图案就可以了。

用料

A姜饼饼干底 可制作24个，直径7cm，厚5mm的姜饼

无盐黄油 145克

红糖 50克

糖粉 50克

蜂蜜 80克

鸡蛋（常温，大个） 1个

低筋粉 400克

盐 2克

肉桂粉 5克

姜黄粉 5克

香草精（可不放） 3克

B装饰

蛋白糖霜（配方见小贴士） 适量

粗砂糖 少许

白巧克力（可替代蛋白糖霜使用） 50克

圣诞节雪花姜饼，超好吃老外配方，含无蛋白不打发糖霜做法的做法

准备好制作姜饼的各种材料，黄油刮成薄片在室温下软化，红糖搅碎过筛，低筋粉过筛备用。

步骤1

将黄油倒入厨师机搅拌桶中，中速搅拌1分钟左右，到均匀细腻的状态。

加入红糖、糖粉、蜂蜜，高速打发

步骤3

再加入全蛋液，高速打发2分钟左右，到完全吸收，没有水油分离的蓬松状态。

步骤4

换上和面钩，再筛入粉类材料（低筋粉、肉桂粉、姜黄粉、盐），低速搅成面团。

步骤5

将面团装入保鲜袋，擀成厚片，密封后放入冰箱冷藏半小时左右。如果着急做，也可以急冻10分钟。不急的话冷藏隔夜都可以。

步骤6

烤箱预热，上下火175度，10分钟。将冷藏的面片夹在保鲜膜中，或夹在两张油纸中间，擀成厚度约5cm左右，用模具扣出图案。

如果没有雪花形状的模具，普通圆形慕斯圈或小碗之类的都可以，画的时候按雪花图案画就可以了

步骤7

把扣好图案的姜饼放在烤盘的烤垫上，剩余的边角料重新揉成团，冷藏后重复操作（因为我要留一部分做姜饼屋，所以面团只用了一半，做了12个）。带网眼的这种烤垫一是不粘，二是透气，烘烤时饼干不容易鼓芯。

步骤8

将烤盘放入预热好的烤箱中层，上下火175度烤8-12分钟左右。具体烘烤温度和时间，要根据不同烤箱实际炉温不同，和姜饼个头大小来酌情调整。

烤好后取出烤盘，自然晾凉后再从烤垫上取下，放在晾网上，冷却到室温就可以装饰了。不要趁热脱离烤垫，刚烤好的饼干发软，容易掰断弄碎，凉了就好了

将蛋白糖霜或融化的白巧克力装入裱花袋，剪小口，在饼干底上画出图案。

步骤11

画好后，趁尚未凝固，撒上少许粗粒白砂糖，晾凉到凝固就可以了。

步骤12

画起来很快，因为图案非常简单，不需要打底稿和调色。如果用白巧克力来画，画的过程中容易遇冷凝固，这时用电吹风的热风稍微吹一下就可以了。
