1、蒜薹煸小龙虾球
食材:小龙虾;蒜薹;姜;五香粉;蒸鱼豉油;白酒;盐。
做法:将小龙虾反复冲洗, 用牙刷刷洗虾身,去头, 虾尾中间一片拧拉一下去除虾肠清洗干净,沥干水分,放姜,五香粉,少许白酒抓匀腌制片刻;蒜薹洗净切段;锅热放油,放入蒜薹煸香,转小火,煸至表皮变软起皱;转大火,放入小龙虾翻炒变色,放蒸鱼豉油,适量盐翻炒入味即可。
2、香辣小龙虾球
食材:小龙虾尾两斤;葱适量;姜适量;蒜适量;大料两颗;花椒适量;香叶适量;干辣椒适量;十三香适量;盐两小勺;糖三小勺;酱油适量;醋适量;料酒适量;鸡粉适量;十三香适量;水淀粉适量。
做法:有辅料准备好,葱切段,姜切厚片,蒜可以切开一刀;锅中热油,将辅料倒入锅中煸炒;调料炒出香味后倒入洗净的龙虾尾,大火翻炒片刻;倒入料酒;倒入酱油;倒入适量醋;三小勺糖;两小勺盐,可以适量多加一些盐为了入味,加一勺鸡粉;倒入一些十三香,加少量水,盖上盖子焖5分钟;开盖,倒入水淀粉收汁,水淀粉稀一些,汤汁略微浓稠即可。
3、椒盐小龙虾球
食材:小龙虾2-3斤;洋葱、姜片、蒜头,葱花适量;食盐、味精适量;料酒少许,椒盐粉一包。
做法:买回来的小龙虾,去头,去肠,洗干净,放在开水里煮一下,开水里要加些料酒,水开后撩起备用。蒜头,洋葱,姜切好。起油锅,把三样配料都放下去煸炒。然后放入虾球继续煸炒,加少许盐(一点点哦,因为椒盐粉也是咸的)和味精。中火煸炒,加入椒盐粉,按自己口味加哦,口味重的多加些。椒盐小龙虾球出锅。
龙虾的做法如下:
1、用剪刀剪去龙虾小钳子,钳子剪掉就不怕夹手了,放手上,剪掉脚,从尾巴顶端用力扯,可以扯出虾线,剥掉龙虾龙。
2、每个都用刷子刷洗,多洗几遍,洗至水清澈。
3、生姜切片,大蒜子备好,干辣椒切断(多些)。
4、锅里放适量油,倒生姜,大蒜子,干辣椒,翻炒片刻,倒入龙虾翻炒。
5、倒入适量白酒翻炒。再倒入适量生抽,醋,盐翻炒。
6、倒适量水,盖上盖子,煮,慢慢煮干至汤汁,最后要留一些汤汁,最后起锅放葱翻炒,盛盘,就可以食用了。

龙虾球是由龙虾为主要食材做成的一道菜品,是山东省传统的地方名菜,属于鲁菜系。一种海鲜风味特浓的炼制品,原料是鱼浆、龙虾萃取物,经过力度适宜的捶打压拍成鱼浆,再擂渍搅拌,加上虾蟹风味的调理,再以成型机作业,制成一粒粒龙虾球。用龙虾肉、姜、葱、酒、精盐、味精、胡椒粉、鸡蛋清等制作而成。
龙虾球的做法:
1准备好生姜、大蒜
2准备好小米椒
3准备好八角和桂皮
4准备好香叶
5放入适量的油
6将生姜、大蒜和小米椒下锅
7将龙虾洗净,去掉头,只要龙虾尾
8龙虾尾下锅
9放入适量的盐
10适量的料酒
11放入适量的水
12放入适量的料酒、生抽、老抽和蚝油
13盖上锅盖,小火烧至水干为止
14最后加入少许糖即可
